Slow Mole - Mexican Stout

Stout with a Mexican twist! Slow Mole is a limited release for our 4th birthday celebrations. It is inspired by the traditional and iconic Mexican dish called mole (pronounced ‘moh-lay’), a rich sauce containing chillies and chocolate. Known for often being labour intensive to make, and complex in flavour, the approach to mole reminds us of our approach to brewing. For Slow Mole, we added cacao nibs, cinnamon sticks and two types of mexican chillies. First steeping them in tequila for an added Mexican touch.

Figure of Speech - Barrel Aged Lichtenhainer with Fig

Figure of Speech started out as a lichtenhainer, a traditional German pale smoked sour beer. The beer was then aged in an oak barrel for 16 months with Brettanomyces Bruxellensis to develop further complexity. Finally, it was then refermented on figs, picking up much of the colour and flavour from the fruit, complementing the smokey and sour flavours of the base beer. This is a single barrel release.

Papaya Don’t Preach - Barrel Aged Golden Sour with Papaya

Papaya Don’t Preach is a blend of four of our golden sour barrels that had been aged for 11 months. We then added the sweet red flesh of 350 Queensland papayas and aged the beer further. The tropical fruit flavours from the papaya complements the acidity and light funk of the base beer.

Drop It Slow - BA Fruited Sour - One Drop Collab

A collaboration between two Botany neighbours that's been over a year in the making. Produced using a combination of new world and old world brewing techniques. After 10 months and a whole lot of mango being added, we bottled it and laid it down for a further 5 months bottle conditioning. It was well worth the slow drop, with the end product being the ideal combo of sour, fruit and funk.
